What can it do without me?

Yes. A user can belong to many workspaces, one subscription covers all of them, and the review queue is shared. Roles and permissions are set however the workspace owner or admin wants — add team members with reduced permissions and visibility.

Can I move a site to another workspace?

Yes. A site, its domain, its media, and its publish history transfer between workspaces in one transaction with no downtime. Rank it in your workspace, deed it to the renter's.
